Pumpkin Cheesecake Cookies

What you need:

cream cheese granulated sugar vanilla extract all-purpose flour ground cinnamon baking soda salt butter brown sugar pumpkin puree eggs pumpkin pie spice 

Use a mixer to beat the cream cheese, vanilla, and sugar together. Scoop small balls onto a parchment paper-lined baking sheet and transfer to the freezer

In a new mixing bowl, whisk together the flour, spices, salt, and baking soda

In a separate bowl, use a mixer to beat the butter, sugars, pumpkin puree, egg yolks, and vanilla. Once well combined, mix in the dry ingredients

Scoop the cookie dough onto a prepared baking sheet. Add a frozen cream cheese piece to the middle and fold the dough over the cream cheese

Whisk together sugar and pumpkin pie spice in a small bowl and roll each cookie in the sugar coating

Place the cookies on a lined baking sheet and cook for about 12 minutes until the tops are set

Allow the cookies to cool completely before serving and enjoy!
