Homemade Carrot Cake

This is my favorite homemade carrot cake recipe! This cake is so easy to make, perfectly moist, and topped with an easy homemade cream cheese frosting.

What you need:

all-purpose flour baking powder baking soda ground cinnamon ground ginger ground nutmeg salt oil eggs brown sugar granulated sugar applesauce vanilla extract grated carrots

Add the flour, baking powder, baking soda, spices, and salt to a large mixing bowl and give it a good whisk

In a separate mixing bowl, whisk together the oil, eggs, brown sugar, granulated sugar, applesauce, and vanilla extract

Add the grated carrots to the wet ingredients and mix. Then, stir in the dry ingredients until just combined

Divide the cake batter evenly between two cake pans. Bake for 30 to 35 minutes or until the tops of the cakes are set

To make the frosting, beat the cream cheese until smooth, then add the butter and continue to mix

Add the powdered sugar and vanilla extract until thoroughly combined 

Level the tops of each cake layer and place one of the layers on a stand. Scoop some frosting on top and smooth it out evenly 

Place the other cake layer on top and use the remaining frosting for the top and sides of the cake 

Toast some chopped nuts and sprinkle them on top of the cake for decoration and enjoy!
