Pumpkin Snickerdoodles

These pumpkin snickerdoodles are super soft and chewy, made with real pumpkin, and coated in cinnamon and sugar. The perfect cookie recipe for fall!


What you need:

all-purpose flour pumpkin pie spice ground cinnamon baking soda cream of tartar salt butter granulated sugar brown sugar egg yolk vanilla extract pumpkin puree

Whisk together the flour, spices, baking soda, cream of tartar, and salt in a large mixing bowl

In a separate bowl, use a mixer to cream the butter, and sugars. Then, mix in the egg yolk, vanilla, and pumpkin puree

Next, add the dry ingredients to the wet ingredients and mix until just combined

Cover the cookie dough and refrigerate. Preheat the oven and prepare two baking sheets

In a small mixing bowl, whisk together the cinnamon sugar

Once the cookie dough is chilled, scoop it out and roll each ball of cookie dough in the cinnamon sugar mixture

Bake for 10 to 13 minutes until the cookies are set

Allow the cookies to cool before enjoying!
