Ice Cream Cake Recipe

This homemade Ice Cream Cake recipe features layers of chocolate cake, vanilla ice cream, and is topped off with an easy whipped cream frosting!


Easy Step-by-Step Instructions!

Make the ice cream by whisking together sweetened condensed milk, vanilla extract, and salt.

In a separate bowl whisk the heavy whipping cream until stiff peaks form.

Gently fold the whipped cream into the sweetened condensed milk mixture in batches. 

Scoop the ice cream into a springform pan and freeze overnight. 

In a large bowl, sift the flour, cocoa powder, baking powder, baking soda, and salt, then whisk in the sugars until well combined.

Add the oil, buttermilk, eggs, and vanilla extract to the dry ingredients and stir until the batter is thick. 

Dissolve the instant espresso powder in boiling water and stir into the chocolate batter. Once fully incorporated, evenly distribute the batter between two cake pans and bake. 

Make the whipped cream frosting by mixing the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

Level the tops of each cake and assemble the cake and ice cream layers. Smooth the sides with a spatula, then spread a layer of frosting over the entire cake. 

Decorate the cake and place it in the freezer for 30 minutes to 1 hour before slicing and serving.
