I’m a fan of quick and easy snacks that taste good and are healthy. These peanut butter energy bites are just that and come together in no time! These delicious energy bites are also vegan and gluten free.
These little energy bites are seriously delicious and only take a few minutes to whip up! I love making a batch of these on the weekend and enjoying them during the week. These bites make a great pre-workout snack as well!
You can sub any kind of nut butter for the peanut butter in this recipe. I added mini chocolate chips to these too, but you can leave them out.. or substitute them with some peanut butter chips. Yum!
You’ll need almond flour and oat flour to make these, but if you don’t have either on hand don’t worry. It’s simple to make your own oat flour and almond flour.
For the almond flour, simply place 1/4 cup of raw almonds in a blender or food processor and blend until a flour like texture forms. Be sure not to over process the almonds.
As for the oat flour, the process is exactly the same. Just grind up old fashioned rolled oats in a blender or food processer until they form a flour like texture. Don’t worry about over processing the oats, the finer the texture the better.
Oh and one last thing, the maple syrup. Be sure to use pure maple syrup, not the kind that is processed and made with corn syrup. The pure maple syrup makes these energy bites slightly sweet, but not too much. Enjoy!
- ¼ cup almond flour
- ⅓ cup oat flour
- ¼ cup peanut butter (or any other nut butter)
- 2 tbsp pure maple syrup
- ¼ tsp vanilla extract
- 2 tbsp chocolate chips
- In a small bowl, combine almond flour and oat flour.
- Add in the peanut butter, pure maple syrup, and vanilla extract. Stir until all ingredients are fully combined, then mix in the chocolate chips.
- Spoon out tablespoon size pieces of dough and roll into balls.
